Cantina used to be what you might expect with a name like "Cantina del Cabo" - a campy somewhat tropical-themed Mexican restaurant. And truthfully it made for a nice place to grab lunch and a margarita. However, owner and founder ["Tom Lovering"] decided that Cantina should be a steakhouse. So now Cantina serves steaks. This is fine, but in a restaurant with neither steakhouse ambiance nor tableclothes, it doesn't really work theme-wise. Ironically, the bar next door, ["Froggy's"], stopped serving American food and now serves Mexican food.
-
- What would work - and be a hybrid of both the Cantina theme and the steakhouse theme - would be to be more like an Islands restaurant. See, Tom is reputed to be a huge [wiki:WikiPedia:Jimmy_Buffet Jimmy Buffet] fan and exclusively wears Aloha shirts. Cantina now serves a BBQ, steak fish and burger-infused menu. All burgers can be made as veggie-burgers, and the Chef, Stan, has nurturing what seemed to many as a rough transition (Mexican food to BBQ+American food) as an opportunity to move the food in a more gourmet direction in terms of flavor and quality. The tables are not sticky due to "hungover bartenders." the bar is cleaned every night after the place is closed, and the tables are the first to be wiped down. If the tables were sticky it was probably later at night when this was experienced, which is understandable with all the people drinking done at them. Also the bartenders are not allowed to work a closing shift followed by an opening one. The kitchen contrary to the previous claim is kept clean. The chef Stan was a military cook and runs the kitchen accordingly. I have been present for numerous health inspections that were passed without a problem.
